Stillwater changed the shape of hospitality in Launceston - now a UNESCO-recognised City of Gastronomy - when it opened in 2000, transforming a 180-year-old flour mill into a world-class dining destination. The heritage-listed building had sat unused and abandoned on the banks of the kanamaluka/Tamar River for a number of years before the Stillwater team brought it back to life. Today, Stillwater is one of Tasmania’s most highly-awarded restaurants, and this year is all about looking back on its extraordinary stories, and celebrating 25 years of our wonderful team, suppliers, partners and guests. We’re marking our quarter-century anniversary with the re-creation of 25 of the most loved dishes that have graced our menus over the past 25 years. Think wallaby wings, macadamia-crusted blue-eye trevalla with lemon butter sauce and smoked roe, Cape Grim beef with whipped jamón butter and textures of beetroot, South Rock Lobster with mandarin purée, and an iconic Bombe Alaska with brambleberry and spiced rum. We’re also looking forward to partnering with one of our favourite Tasmanian brands, welcoming guests back to our boutique accommodation at Stillwater Seven, and plenty more surprises fit for a 25th birthday!
